Air fryers are fast, easy, and hard to mess up, which is why nearly every kitchen has room for one. But sizes and styles vary a lot. Here is how to pick the right one.

Basket vs oven style

Basket air fryers heat fast, crisp well, and are simple to clean, but you shake or flip food mid-cook and capacity is limited. Oven-style units, including toaster-oven hybrids, hold more, cook multiple racks, and often toast and bake too, at the cost of counter space and slightly less intense crisping.

Size it to your household

A three to four quart basket suits one or two people and snacks. Families do better with five to six quarts or a dual-basket model that cooks two foods at once. Oven styles scale higher if you cook full meals. Buy a size up from what you think you need; small baskets fill fast.

Features worth paying for

Dishwasher-safe, nonstick baskets make cleanup painless and are the feature people appreciate most day to day. Simple dial controls are reliable; presets are convenient but not essential. Dual-zone baskets that finish two dishes together are genuinely useful for full meals.

What to skip

Fancy app connectivity and dozens of presets rarely change results. A good air fryer is really a small convection oven; temperature range and even airflow matter more than a long feature list.

Wattage and preheat: the specs nobody lists

Two air fryers with identical basket sizes cook differently, and wattage is usually why. Most 4-quart baskets draw 1,400 to 1,500 watts. Drop below about 1,200 and you get a unit that struggles to recover temperature after you open it, which turns a 12-minute batch of fries into 18. Oven-style models run higher, often 1,700 watts, because they heat more air. Anything sharing a kitchen circuit with a toaster or kettle will trip a breaker if you run both, so check what else is on that outlet before you buy the biggest unit on the shelf.

Preheat is the other hidden variable. Manufacturers quote cook times from a preheated basket, and a cold start adds three to five minutes. Some models preheat automatically when you set a temperature, others start the timer immediately whether the unit is hot or not. The second kind produces undercooked first batches until you learn to add time yourself.

Capacity claims versus usable space

Quart ratings measure the basket volume, not the cooking surface, and the cooking surface is what limits a batch. Air fryers crisp by moving hot air around food, so anything stacked or overlapping steams instead. A 5-quart basket that is tall and narrow holds less in a single layer than a 4-quart basket that is wide and shallow. If a listing shows dimensions, the floor area of the basket tells you more than the quart number does.

Practical single-layer capacity by size: a 3-quart handles two servings of fries or four chicken tenders. A 5 to 6-quart handles a pound of wings or four chicken thighs. Dual-basket models around 8 to 10 quarts total run two 4-quart zones, which is the right answer for a protein and a side finishing together rather than one enormous batch.

The parts that fail first

Nonstick coating on the basket is the usual failure point, and it goes faster if you use metal utensils, run it through a harsh dishwasher cycle, or use aerosol cooking spray. The propellants in spray oil break down most air fryer coatings. Brush oil on instead and a basket lasts years rather than months.

After coating, the ranked failure points are the basket release button, the fan motor bearing, and the control panel on touch models. Dial controls outlast touch panels by a wide margin because there is nothing to delaminate. If a listing offers the same model in dial and touch versions at the same price, the dial is the more durable buy.

What a good price looks like

Basket air fryers in the 5 to 6-quart range from established brands sit at $80 to $130 at regular price and drop to $50 to $70 during major sale events. Dual-basket models run $150 to $200 and reach $110 to $130 on sale. Oven-style and toaster hybrids start around $150 and top $300 for units with rotisserie and dehydrate functions. A 6-quart basket model advertised at $39 is either a clearance of a discontinued line, which is fine, or an unbranded unit with a 1,000-watt element, which is not.

This category discounts heavily and often. If the price you see is not clearly below the last few months of pricing, waiting two to three weeks almost always works.
